This is a mochi slay with crispy snow fizz, light silica, and light floam, scented with pistachio pudding, pineapple, whipped cream, and coconut. Growing up, Watergate salad was a staple at all of our family holidays. I still remember the recipe because I made it with my grandma several times a year. So when Palmetto released this one, I knew I had to have it. I love Amber’s mochi texture. It’s stretchy, inflates easily, and produces tons of satisfying bubble pops. I wouldn’t call it sticky, but it has that grippy quality where you can hear it cling slightly as you pull your hands away. The silica and floam are very subtle, so they don’t make the texture abrasive at all. Instead, they add just enough visual and tactile interest to resemble the nuts and pineapple in the real dessert. The scent absolutely nails it for me. I smell the pistachio pudding first, followed by the pineapple, whipped cream, and coconut. Every note is balanced perfectly, creating a scent that instantly transports me back to those family gatherings. This one was incredibly nostalgic and even a little emotional.
